    What Makes Tortellini Authentic in Bologna

    Authentic Bolognese tortellini follow a precise recipe registered by the Confraternita del Tortellino. The filling combines pork loin, prosciutto crudo, mortadella Bologna IGP, Parmigiano Reggiano aged at least 24 months, egg, and a hint of nutmeg.

    The pasta is made with eggs and flour, rolled thin, and cut into small squares. Each tortellino keeps the characteristic ring shape of the Bolognese tradition.
