    What we can serve gluten-free — and what we need to tell you before you book. We prefer honesty.

    Le Moline is not an AIC-certified restaurant (the Italian coeliac association standard). We do offer gluten-free dishes, but our kitchen is shared with preparations that contain gluten: there is a real risk of cross-contamination. If you have severe coeliac disease, please consider this carefully and always tell the staff. We'd rather say it upfront than promise something we can't guarantee.

    Our boards can be served without croutons on request. Remember that tigelle contain gluten and are not suitable.

    Why we don't promise more

    Traditional Bolognese cuisine — tagliatelle al ragù, lasagna, tortellini, tigelle — is built around egg pasta and wheat flour. Running a gluten-free line that is truly safe for coeliacs requires dedicated space, tools and procedures: a certification we currently don't have.

    We'd rather write it clearly here than seat a guest with severe coeliac disease and only then explain the limits. If the residual risk of cross-contamination isn't compatible with your condition, we recommend choosing an AIC-certified restaurant.
